Verdelho is a Portuguese variety introduced to Sydney and the Hunter Valley by James Busby and John Macarthur in the 1820’s. It is considered a foundation variety of the Hunter Valley, alongside Semillon and Shiraz.
This Verdelho, uses only ‘free run’ juice in its production. Free run, is the juice that runs freely from the freshly picked grapes during the crushing process, naturally pressed from the weight of the grapes above it. This results in juice that is pure and fresh with beautiful clarity of flavour and very low levels of phenols, integral for this delicate style.
This Verdelho is an aromatic style of tropical fruit and pineapples, which continues through to the palate, finishing dry and crisp with a hint of honeysuckle. Perfectly matched with Pork & Cabbage Gyoza with a sesame soy dipping sauce.
2017 The Rule Breaker CSB
This is a blend that breaks all the rules. Most often, there are those that sit in the Chardonnay camp or those that sit in the Sauvignon Blanc camp, and never the two shall meet… until now. Heroically, we have brought together these two worlds. Combined the synergy of the ripe tropical flavours of the Chardonnay along with the citrus and apples of the Sauvignon Blanc, result in a fresh, zesty wine.

2017 Mango Tree Chardonnay
On our Vineyard stands a lone Mango Tree which overlooks the vines. It’s custodial presence gives it naming rights to this wine. Chardonnay can produce some lovely tropical fruit flavours, and to further compliment these fruit characters we make the wine using traditional French / Burgundian methods. The fruit is picked at optimum flavour ripeness, and the juice is allowed to ferment “ wild “ in 500 litre French Oak Puncheons. The wine and lees are stirred regularly giving the palate a further dimension of creaminess and complexity of oak and fruit flavours.
Perfectly matched with roast spatchcock with citrus butter sauce and garlic and thyme duck fat potatoes.
The Boss Semi Dolce Rosso
The Boss, named fondly after our Cellar Door Manager, John Earl. He requested a wine for the cellar door that was a little but fun, not too serious and most importantly an absolute pleasure to drink! And hence The Boss was born... This wine is our take on the Italian Lambrusco style. It is fragrant and fruity with a slight sparkle or spritz (frizzante in Italian). The Boss is totally uncomplicated and is both fun and endlessly food friendly.

2016 Primeur
This is our first ‘vin de primeur’ from our Moon Mountain Vineyard. It is a softer style of red wine that is harvested, made and released for sale in the same year.
Our Primeur or ‘new wine’ style is made from Shiraz grapes grown at our Moon Mountain vineyard and fermented quickly to minimise the time on skins, and hence reduce the influence of tannin. The result is a fresher, fruit driven wine low in tannin structure. This wine is purple/pink in colour with ripe, soft fruit, dominated by strawberry, fig and pear flavours. For optimum enjoyment of this wine it is best served slightly chilled, and for those that take their wine seriously 13°C is ideal. It is made for immediate drinking but can be kept for up to three years if desired.
2015 The Doctor Cabernet Sauvignon
The Doctor Cabernet is named in honour of Dr. Alan Burgess, who planted the Moon Mountain vineyard in 1969. We will forever be grateful to him for planting such great fruit and allowing us to continue his good work.
Cabernet Sauvignon is one of the principal varieties of Bordeaux and responsible for some of the truly great wines of the world. Its hardy vines and thicker grape skin make it resistant to many viticultural hazards and as such is a popular variety grown in Australia.
This 2015 Doctor Cabernet exhibits fragrant aromas of cherries and blackcurrants with a hint of green olive and spice. The textural palate is lively and rich with velvety tannins balancing with a firm soft finish.
2015 Encore Shiraz
Encore – “a call for a repeated or additional performance as called for by an audience.”
Due to the resounding success of our wines we are now ‘encoring’ a new range as called for by our members. Sourced from small parcels of fruit grown in various parts of Australia this wine will have you on your feet calling for more. The scene begins in the glass with the wines appealing deep, rich colour. The releasing aromas further envelop its audience exhibiting ripe plum and blackberries. And for the finale, an intense palate with ripe plum characters shine, further enhanced by a hint of green olive and liquorice notes. The fruit and oak are perfectly balanced with a spicy, peppery finish. Enjoy with 6 hour braised organic lamb shoulder with onion gravy.

Due to the resounding success of our wines we have encored a range as called for by our members with fruit sourced from small parcels grown in various parts of Australia.
This blend is a classic pairing of two great varieties. It was the backbone of red wine making in Australia in the late 1970’s and early 80’s and a blend that never deferred to “Old World” rules. When blended these wines capture the elegant structure and texture of the Cabernet overlaid with the suppleness and generosity of Shiraz.
Our Encore Cabernet Shiraz is a trip down memory lane exhibiting complex licorice, mint and pepper with sweet cherry fruit, tempered by savoury olives and soft tannins.
