The MC – Blanc de Blanc – SOLD OUT!


We are very excited to release our very own Methode Champenoise (MC) made in a Blanc de Blanc style.  Blanc de Blanc literally translates to white of whites and is traditionally made exclusively from Chardonnay grapes.

Our 2011 MC is made from Hunter Valley chardonnay. It was a cooler than average vintage that produced rich clean fruit, and will go down as one of the Hunters great years.  The fruit was picked early to maintain finesse and elegance, and to retain crisp acidity most needed for a base wine made for ageing. The wine went through primary fermentation in stainless steel tanks and then transferred to bottles, inoculated with yeast and liqueur to start its secondary fermentation and aged on lees until its disgorgement on 24/07/2020. These nine years in the bottle ageing on lees has resulted in a lovely silky palate, with flavours and aromas of butter, baked bread, brioche and nuts.  It has a creamy mousse with a fine bead of bubbles and is a great wine to celebrate any special occasion.

Cellaring Potential

With careful cellaring we are confident this wine will cellar for at least 5 years. Ideal cellaring conditions are away from direct sunlight and damp with an ideal temperature of up to 15°C.
