Viognier can be very delicate – it favours warm, but not hot climates, has variable crop loads and requires a lot of attention at harvest time. As a result, it provides a very small window for optimal ripeness. Pinpoint that optimal ripeness and the aromatics, flavour and delicate mouthfeel produce a stunning wine.
This Viognier was fermented in French oak puncheons for 6 weeks, and then bottled early to retain the lovely textural creaminess on the palate and the fresh peach and apricot complexity. Who doesn’t love peaches and cream! .
