2018 Parish Shiraz


Sourced from growers from the “Parish of Pokolbin” we have naturally decided to call our latest creation the ‘Parish’ Shiraz.

The 2018 vintage is the second of what has turned out to be three consecutive great vintages of the Hunter – 2017, 2018 and 2019. The grapes were picked at optimum ripeness and then crushed into refrigerated open fermenters allowing the must to ferment slowly to maximise the wines colour, aroma and flavour. It was then lightly pressed and transferred into French oak 500L puncheons for maturation.

Our Parish Shiraz displays dark red and purple hues while the aromas are of spice, red fruit and ginger notes.  The palate is typical of a Hunter Shiraz in a great year – soft, with lovely purity of fruit and gentle tannins.  It is ready for your drinking pleasure now or will age gracefully for the next ten years.

Cellaring Potential

With careful cellaring we are confident this wine will cellar for up to 10 years. Ideal cellaring conditions are away from direct sunlight and damp with an ideal temperature of up to 15°C.
